As darkness falls in Fukuoka, small stalls roll out onto the pavements. Each has a counter for about eight people, a curtain, a glowing lantern and a cook working inches from your plate.

Why the yatai are a wonder

Yatai were once common across Japan, but most cities banned or limited them. Fukuoka kept them, and the city now protects them as part of its culture.

Sitting elbow to elbow with locals and travellers, you share drinks, stories and steam from the ramen bowls.

What to eat

Hakata ramen, with a rich pork bone broth and thin noodles, is the classic choice. Many stalls also serve yakitori, oden, gyoza and grilled mentaiko.

Some newer stalls serve French, Italian or fusion dishes alongside beer and shochu.
